HAPPY BIRTHDAY DAD

Well, today is not my dad's birthday but it was last Wednesday, we decided to celebrate today with a family cookout this weekend as we all had off for Labor day...and can I say it was a great day....


I was in charge of the appetizers so check out my post for Tuesday....we loved the crackers and bacon so easy to make it...I also used Tasteful Simple pepper jam that you pour over cream cheese and served with crackers....yummmmy

My dad turned 70, it is hard knowing my parents are getting old which makes me older....

I came up with the idea of 70 lottery tickets for my dad and one of my sisters stole the idea...but I came up with an idea of getting 70 things that he liked (such as 30 lottery tickets 24 packs of gum and such) and it added up to priceless things about my dad and then I wrote a heartfelt letter regarding 70 different things I knew about him....of course, when I was reading it to him....I made it through the reading until the number $1 thing about him....which is he is loved by many then I started crying of course my family made fun of me..

It was good fun, good food and good family.....

WEIGH IN SATURDAY


Well, guess it is weigh in day.....and all I can say ...it is a beautiful day when you weigh in and it is not a weight gain....yeah me.....a little disappointing but it was a weight loss but only .6 but it adds up...

I think I need to start walking and doing more activities to get this going...I have been on the weight lost campaign for the past 9 weeks and it is a total of 15.6 so at least it is coming off I just need to work on it....my goal is 2 pounds a week and that would make me behind 2.4 behind at least its not more.....

THANKFUL THURSDAY

Today is Thankful Thursday and I have a lot to be thankful for....but this week it is about Friends. I am thankful for all of my friends but there is one person I am the most thankful for she has motivated me to join her on the weight watch*ers trial. She is a very positive person and she always has a smile on her face even when she is faced with stress at work. She works a full time job and a part time job as a waitress. And never calls in sick...a very responsible person.

But the most important thing she has done is interested me in a new writer. I love to read and I am addicted to this book



I have not been able to put it down. I would love to tell you about everything in this book, but you should read it for yourselves. I will give you a few little tidbits. First the movie will be released this December...right now there is 4 in the series....and its a love story with a vampire thrown in for fun....well I need to go as the book is calling me....

All I have to say is thanks friend for the heads up about the book....

RECIPE TUESDAY

Hope your interested in a good mexican meal along with spicy devilled eggs hope enjoy them both



CHICKEN ENCHILADA VERDE

4 boneless skinless chicken breasts
1 can of chicken broth (seasoned)
2 c. water
1 15 oz can of el Paso green chile sauce
1 8 oz can of el Paso green chile sauce
1 small can of diced green chiles (drained)
1 small can of salsa verde (green)
2 c. shredded monterey jack cheese
1 c. shredded pepper jack cheese
1 c.shredded american cheese
1 c. diced yellow onions
salt and white pepper to taste
1 pkg of flour or wheat tortillas
sour cream
black olives

You'll need 1 glass baking dish to hold 6 enchiladas. Preheat oven 350 degrees.
Trim off any excess fat or skin off of chicken breasts. Wash thoroughly and place chicken in a deep pan with chicken broth and water. Add salt and pepper. Bring to a boil then down to a simmer. Cover with lid and let cook till chicken is easy to shred with fork.

Discard broth. Shred chicken with fork and set aside. Combine all cheeses and onion in a small bowl.

Open small can of green chile sauce and pour on bottom of glass baking dish. Fill each tortilla with shredded chicken, diced green chiles, cheeses, onion, and top with 1 tblsp of green chile sauce. Reserve half the cheese and onion combination.

Roll tortillas and place in baking dish seam side down. Take remaining green chile sauce and thoroughly pour over all. Top with remaining cheeses, onion. and the salsa Veda, and black olives. Bake in 350 degree oven for 20-25 min or until heated through and cheese has melted. Let stand 5 minutes. Top with sour cream or your favorite hot sauce.

Note: If needed you may have to grate more cheese depending on how much cheese you like.






SPICY DEVILLED EGGS

6 hard cooked eggs
1 tbsp. fresh parsley
1 tbsp. scallions, minced
1 small jalapeno pepper
1/4 cup Miracle Whip
1/4 cup shredded cheddar cheese
1 tsp. Dijon mustard
1/2 teaspoon cilantro (optional)
pinch cayenne pepper
pinch chili powder
1/4 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon horseradish, grated
1/4 teaspoon celery seed

Slice each egg in half crosswise. Scrape out yolks saving contents in a bowl. Add mayonnaise, mustard and blend together. Add remaining ingredients to combine.
Spoon approximately 1 tbsp. of the yolk mixture into each egg half. Sprinkle lightly with chili powder and paprika. Garnish with a sprig of parsley.

I COULDN'T WAIT

I couldn't stand it any longer, I needed it and I got it.....
and here it is





I went to the appl*e store over the weekend expecting to wait a few hours and I was prepared. I brought my glasses, my water bottle (it was 94 outside), and my mints i along with my credit card...I parked my car looked around for the store and headed to the land with the toy I wanted. Getting more nervous as I walked, I started asking myself a million questions for example, what if it isn't what I really wanted, what if I was disappointed and what if isn't what I really needed....

I get to the door expecting to wait and wait and I was able to walk right inside, you heard right inside I just went thru the door and they take my name...my nerves are starting to get to me.....its in the store where I know there is not one but 100's of them....all for the taking and paying....lol

I look around and they have a table with them on it so you can handle them and play with them, let me tell you what a feeling.....within 5 minutes of walking thru the door the salesmen Tim walks over to me and I tell him talk me into this, (I really didn't want to make a commitment with out knowing all the facts) Just so you know I also was looking at the ip*od nano, comparing the two....a refurbish one is 179 and you know the phone was 200

Tim was very nice and taking his time to help to explain some of the features.....so within 15 minutes the decision was made and I was on my way to become a proud owner of a new iphon*e.......

After 40 minutes or so we had the line transferred, I sorta know how to operate cannoli's baby (yes I did name her that) and we were on our way to a wonderful life together.....

so if you don't see me for a few days you know what's going on, I am just busy with the new love of my life....and let me tell you I LOVE HER....also if you know me and are nice to me I might let you hold her but please make sure your hands are clean and no finger prints please

CARDS, CARDS, CARDS


Well last night, I finally caught up with my friends that I play cards with many times in the past..it has been probably at least 2 years since we have played and in that time someone has passed away and someone else got married, and I bought a house and someone else has been taking care of his mom...we use to play about every 6 weeks or so...it was so good to see the crew...they are the ones who gave me the name cannoli...which I use often....as you can tell...

We played for about 4 hours and played a lot of different games such as screw your neighbor, follow the queen, 99, left right center, hi low, and a number of other card games...this is the first time we have played 99....I love this game....

The food was so delicious we had pulled pork sandwich, pasta salad, appetizers, and even key lime pie (I didn't have any for your info) (lol)and wine to drink...nothing like playing cards and enjoying an adult beverage along with it

I think I lost money during the night but it was so worth the time to go there...I enjoyed it very much but next time it would be nice to be the winner JOANN.....so let me win....lol

WEIGH IN DAY


I feel like all I do is make excuses for weigh in day....unfortunately, people in my life needs to not ask me out for dinner or drinks on Friday nights, repeat after me, water only, water only, water only.....no drinks or food....

Last night, my husband wanted to go back to the Japanese restaurant for the dinner buffet since we were with out children...the food was delicious, the company was great...and no arguing

All night long, I kept asking him...am I eating to much you know tomorrow is weigh in day and I can't face it...as I fill up my plate..

So now it is time to weigh in and I can say with pride it was a lost, only 1.2 but it works, so now I have reached the 15 pound mark yeah me...
well on to next week.

SHOWING OUR SUPPORT

Dear family and friends:





On Thursday, September 11th, 2008, an American flag should be displayed outside every home, apartment, office, and store in the United States . Every individual should make it their duty to display an American flag on this seventh anniversary of one our country's worst tragedies. We do this honor of those who lost their lives on 9/11, their families, friends and loved ones who continue to endure the pain, and those who today are fighting at home and abroad to preserve our cherished freedoms.

In the days, weeks and months following 9/11, our country was bathed in American flags as citizens mourned the incredible losses and stood shoulder-to-shoulder against terrorism. Sadly, those flags have all but disappeared. Our patriotism pulled us through some tough times and it shouldn't take another attack to galvanize us in solidarity. Our American flag is the fabric of our country and together we can prevail over terrorism of all kinds

THANKFUL THURSDAY



Another Thursday is upon on us and I have so much to be thankful for.....So, I needed to put my thoughts into words and I can say it with pride, I am thankful this is the last Thursday before school starts and all I can say is AMEN!!!!!! I'm sure there is a lot of other parents who feel the same way I do too.......Five more days before the school bell starts chiming.

This has been a very rough and long summer and we are still not done and daughter #1 problems or should I say our problems. Hopefully she will get her act back together and we can resume our life trying to survive....

I will look forward to next week when daughter #2, will be back at elementary school and I can listen to my radio station on the way to and from work...yahoo...I miss my Alexis and Jennifer on the Sirius radio channel....not all topics age appropriate for a 9 year old....and can I say I am really done listening to radio D*sney...I need a break from it....

RECIPE TUESDAY

Here is a few delicious summertime recipes for the last few weeks of summer, so please enjoy them.


FROZEN DAIQUIRIS
Impress your guests by offering them a wide choice of frozen daiquiris.

What makes this summer staple so popular is the fact that there is one simple recipe for the Daiquiri and by simply having a selection of fruit available your options grow.

FROZEN DAIQUIRI RECIPE (basic)
1 1/2 oz Rum
1/2 oz Orange liqueur
1 1/2 oz lime juice
1 tsp sugar
Ice
Use a blender to mix all ingredients.
Adding Flavors:
Banana Daiquiri : same as above but add - one sliced banana and 1/2 oz banana liqueur (optional)

Peach Daiquiri: add: 1/2 cup of fresh peaches and 1/2 oz peach schnapps (optional)

How about raspberries, mangoes , Kiwi.......The only limit is your imagination and the availability of fresh fruit!!


Easy Grilled Chicken

Ingredients

4 each chicken breasts halves, skinless, boneless
1 cup salad dressing, italian, low-fat or fat free
1 each green bell pepper
1 each sweet red bell pepper
1 each zucchini

Directions
Place washed chicken breasts in large sealable bag. Add 1 cup fat-free italian dressing and close. Let marinate for 5 to 10 minutes.

Cut up peppers into big chunks, and zucchini into big slices. Put into another sealable bag. Coat with leftover dressing.

Grill chicken and veggies over medium heat.

ENJOY!!!!!!!

SEEING THE POSSIBILITIES

What a great saying, I seen it on my show THAT'S LIFE, and it really hit home. I need to keep that close to my heart and remember it in times of trouble.

One of the reasons it means something to me is I can see the possibilities at the end of a situation, just like my weight loss that I am stressing about. I need to remember that this is a slow and painful (yes, painful) process. It was much easier to put it on though.....lol

This is also important due to alot of tensions at home, do to daughter #1 going thru the growing stages of adulthood, (when does this end?????)but she also needs to remember I am the parent and I am not completely dumb. The possibilities that I hope for is this is she will become a great person and will grow from this experience. I hope!!!!

And the last possibility is that that g-d wouldn't give me more than I can handle, right.....lol

WEIGH IN SATURDAY

Here it is Saturday and it is weigh in day what can I say. I am nervous have I had enough water to drink, did I over eat, did I do enough this week.

I forgot to mention that my brother and I were at our daughters soccer practice this week and we went walking around the school, I think that it added 4500 hundred steps to my count for the day. Unfortunately, it was after working all day and all I can say is I was tired.....

So, I go to the meeting and it was about all the old programs from the
past years thank g-d that I didn't attend then it included 2 helpings of liver a week. They even suggested making it in the blender so you can drink it, yuck.... Along with 5 servings of fish and two servings of bread a day.

So, it came time to celebrate the milestones in our weight loss journey and I am proud to say I LOST 2.2 yeah me..So, I finally added my ticker of weight lost on the side bar, but it just includes the little goal of 28, if I put the total I really want to lose it is to over whelming for me to handle. So, I thought I would add a little more at a time when I reach the 28 pound mark.


So, I have decided that when I reach my different goals along the way I will reward myself. So, for the first reward, I will go and have a big m*c, from the place with the golden arches. They tell me, it won't taste as good as I think it will. But let's hope it does, lol...SI only have 14 pounds to go.

The second goal is at 50 pounds and for that reward will be the one thing that I dying for ......and here it is....

I don't know if is because I am on this journey, but it bothers me when I see people over eating and I mean eating constantly then complaining that they don't know how they keep gaining weight. It is very aggravating to be supportive to this person and say I don't know either, but really want to say its because you are stuffing your mouth.....

I need to tell you a story regarding liver....my years ago when I was a child, my mother would make liver. She loved to fry it with onions.




My brother being the youngest of 4, and the only boy would ask my mother for this for dinner. My one sister and I would sit at the kitchen table for ever and ever trying to doctor it up and still be unsuccessful. Years later when we would retell this story, my brother finally confessed that he hated this as much as we did, but it was pleasure to see us suffer and it made it worthwhile for him to suffer thru it....lol

THANKFUL THURSDAY



Another Thursday is upon on and it is time to reflect what I am thankful for.....I would like to say I am thankful that my family has not had any serious illness to deal with....we are pretty much in good health with medicines to keep us in check....

This has been brought to my attention by a close friend of mine and what her and her family are dealing with for the next 13 months....Her son Joshua (the reason I said his name is I will be adding a prayer line for him)is the youngest of 3 children. Three or four weeks ago his eye started to roll upwards and then he was complaining of blurry vision.

His mom took him to the eye doctor who didn't see anything suggested another doctor who said maybe from a previous injury with a baseball he might have a broken bone floating around in the eye area. He ordered a cat scan and recommended another doctor. She was unable to get into the doctor that day.

The day after his 12th birthday and 2 days since all the doctors appointment. She was ale to take him for his cat scan and before they could get out of dodge as they say, they tell her he has a tumor on the back of his head. It is the size of a plum. They admit him immediately to start some drugs to help control the swelling and make a plan of action.

A few days later, he has surgery to remove the tumor. They were able to remove 99% of the tumor. Yeah!!!!!! Then the hard part comes waiting for the results...

Unfortunately it is not good he has malignant stage 4 brain cancer. He must has 13 months of chemo 5 days a week and once a month he will be admitted into the hospital for radiation treatment for an over night visit. No school for the next year, no visitors unless all is well.

My friend and her husband now have to work out a schedule with their employers to be able to provide time to take their son to these appointments and dealing with him being so sick. We work at a daycare and her husband is an assistant manager for a company that deals with the pubic. All those germs.

This has also hit their other two children. The oldest is a son who is a senior in high school trying to do all the things high schoolers do while holding down a job, looking for a college and playing football. And the middle child a girl who is the mother hen trying to do everything she can to make things better and she is a cheerleader and busy in her own right.

This makes you appreciate the colds, the bumps and the bruises and the broken bones. If anyone has info on how to do a fund raiser or any other suggestions for my friend and her family, please email to help me out with ideas....

Let's try to look for a rainbow in the next 13 months....

RECIPE TUESDAY

Here is a couple of nice summer time recipes.....


Grilled eggplant with a little balsamic vinegar and herbs and olive oil.

Cook Time: 15 minutes

Ingredients:

1 large eggplant
3 tablespoons olive oil
2 tablespoons balsamic vinegar
2 cloves garlic, very finely minced
1 pinch each thyme, basil, dill, and oregano
salt and freshly grated black pepper

Preparation:
Heat grill.

When grill is hot, slice eggplant about 1/2-inch thick. In a small bowl, whisk together the olive oil, balsamic vinegar, garlic, herbs, salt, and pepper. Brush both sides of the eggplant slices with the oil and vinegar mixture.
Place eggplant on the hot preheated grill. Grill about 15 to 20 minutes, turning once.



Corn on the cob is grilled in husks then served with crumbled bacon, chives, and more butter.

Cook Time: 25 minutes

Ingredients:

8 ears corn
butter, softened
crumbled cooked bacon
chopped chives

Preparation:

Pull back corn husks and remove silk. Place corn in cold water for 20 minutes; drain. Spread softened butter over corn; replace husks. Roast on grill for 20 to 25 minutes, or until tender. Serve with chopped chives and crumbled bacon, along with additional butter.

VACATION IS OVER

Today is the last day of vacation (I do have more time coming just not planned for a week off)and can I say I really don't want to go back to work.....why can't I be a millionaire or married to one and just hang out and do what I want to with no cares in the world...Please don't make me go back...

Not that we really did anything special this past week. Some of the high lights included the movies, gambling, out to eat a few times, a few adult drinks here and there and just enjoying our home and family....

Tomorrow is my mother-in-laws birthday. Happy birthday. She will be 83 years old or is it young...She really wants to move in with us or someone and let me just say I can't ever see that happening...my house is way to up helve for her to live in, besides the temperature is always changing, we keep the windows open and have fans going and the dust.....I think would do her in....lol

WEIGH IN DAY




This week it has been a very hard week to work on my weight loss. I have been on vacation, well lets say a family vacation.....and right there that is enough to make you eat a COW....spending all that time with the family


Here are the highlights of the week,

Monday, we really didn't do anything just hung out my feet were pretty swollen
Tuesday, had a test done, went to breakfast and then had dinner brought in (tacos)
Wednesday, I went gambling to Seneca and can we say free drinks and a huge buffet dinner
Thursday, again can I say subway for dinner and another test done at night
Friday, margaritas and Mexican dinner
and today we are going to The Barn for dinner (yum)

I went to ww with the hope that by some chance there would be a weight loss and not any more gains.....and the result is 2.2 pound LOSS yeah me.....so for a grand total of 11.6 so I am very excited....but I still need to drink my water and start walking and exercises...

So in honor of the weight loss, I am going to add another ticker about weight loss...

Also, seen my cousin who 25 and is getting married next June 14. She asked me to be a witness and have to write in Hebrew (need to practice, practice and practice) and help plan her wedding and also go shopping for her wedding dress in Oct something like running for the dress....I am so excited....so another reason to lose weight...

THANKFUL THURSDAY



Today is thankful Thursday and I am thankful for my extended family. My dad side of the family had a family reunion last Saturday as we celebrated our family coming together. It is hard to believe that we have been doing this for 25 years.. They try to plan it for the first Saturday in August.

It started with my father and his 5 sisters and 3 brothers and it is a tradition that has continued every year. Every year someone else hosts it in their home so it travels around. So far we had traveled to Indiana, Ohio and Pennsylvania.


This year, my father was there along with his 2 brothers and his one sister. Those who did not attend of his family were 4 of his sisters. And 1 of his brothers has passed away. (This started because of him...he had heart problems and wanted his brothers and sisters to have a family reunion like they did when they were younger.)

Out of all the aunts, uncles, cousins, sisters and brothers, nieces and nephews, there is 4 of us that have made it to all of them. This is includes my father, my aunt(my uncles wife) and my cousin and then myself. Of course, there are some who have attended all of them since they have been around, but not 25 of them....There is one cousin who we had thought had been to them all and had finally confessed that he is not in the club...this year he tried telling me that my aunt had moved and gave me a fake address...lol....I believed him then it finally sunk in that he was trying to keep me away...I need to get back at him...any suggestions?


Every one brings a side dish or dessert and the host supplies the meat and buns and themes. Some of the themes have been bring a duck decorated, make a boat that floats, we have had a circus and many other ideas. And it is always exciting to see what will be there. The different food or if your lucky they ask you to bring the same thing every year...(that would be taco dip for me, potato salad for my sister, and chocolate chip cookies for the other sister and corn on the cob for another cousin) It is a lot of fun to catch up with relatives that we normally don't see or hang out with.

Some of my cousins would say it was them and us...but now it is we. We are a family that belongs together...to remember our grandparents and great grandparents and relatives that are no longer in attendance. I am so proud to be a part of this family ...


One of the things I noticed this year is that my brother and 4 of my first male cousins look alike they have dark hair and dark eyes. While 2 others look a like with blond hair and blue eyes.

One of the most exciting thing (besides eating) is the family baseball game that is played. My uncle(the commissioner) is in charge and of course we don't play the normal way, the rules are always being changed during the game... We do stand for the National Anthem and then the game and the fun begins....There are so many laughs (and hopefully not to many tears from injuries) and so many memories made from this game and we all look forward to it every year...


I have to say this is one of my favorite things that happens once a year and I am very grateful for that....

RECIPE TUESDAY

Here are two easy recipes for your crockpot....one is a main course and the other a dessert.....


Easy Chicken Cacciatore Recipe



1 chicken, cut up, about 3 to 3 1/2 pounds
1 jar spaghetti sauce
chopped onions
sliced mushrooms
chopped green pepper
salt and pepper
red pepper flakes

Preparation:

Place a whole cut-up chicken (3 to 3 1/2 pounds) in the slow cooker/Crock Pot. Dump in a jar of spaghetti sauce, some cut up onions, mushrooms and green peppers. Salt and pepper to taste. (I use those little red pepper flakes too.)

Cook all day on low (7 to 9 hours).

Serve over noodles or spaghetti.


Dessert Recipes

Crockpot Rice Pudding With Berries

Dried cranberries, dried blueberries, and orange juice concentrate make this a delicious rice pudding.


Ingredients:

1 package (6 ounces) dried cranberries
1 package (4 ounces) dried blueberries
1 can (12 ounces) evaporated milk
1 1/2 cups water
8 ounces frozen orange juice concentrate
3/4 cup sugar
1 cup heavy cream
Dash salt
1/4 teaspoon ground cinnamon
1 cup short-grained Arborio rice

Preparation:

Spray the inside of the crockery insert with nonstick cooking spray. Combine all ingredients and pour into the slow cooker. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 2 1/2 hours, or until rice is tender and mixture has thickened. Stir the mixture about halfway through the cooking time and shortly before it's done.

WEIGH IN DAY



Alright the time at come again for me to get on that scale and see what it holds for me. But, before we do that let me back track....about what I had been eating and other little things this week..


I went to the doctor on Monday and my weight was down 12 pounds where it was about 6 weeks ago....and my blood pressure was 128/78 which is TERRIFIC for me...

Tuesday was eating at my mother's....corn on the cob, roast, greenbeens, all I can say is delicious.

Wednesday okay and uneventful

Thursday was a night of 2 drinks of mudslide (ticked off about the wedding) and for dinner biscuits and sausage gravy....not that I am bragging but I make a mean sausage and gravy ask my family....

Friday, lets say it was a lost cause...pizza for dinner and lunch was supplied by a parent who works for Houli*hans and they have the best shroom's and tuna grilled steak and breaded chicken and everything...

So, I guess after I reviewed all of what I had been eating and drinking this week, I can see why there is the weight gain (again). It was .02..yes they do have digital scales at ww....now on to more water and getting back on track like watching what I am eating....

GOING TO THE CHAPEL AND




I'm going to get married but its not me.and it wasn't at a chapel either..I think that would be illegal to get married while married LOL except in the state of Utah. I received a call last night...telling me that my sister and her fiancee would be joining the ranks of all of us in wedded bliss....

If you ask me how I feel (and even if you don't) this is my blog and I can write what I want...I am very upset not that it matters to any one, she can marry whom ever she wants and I do like him but the point is she didn't want anyone at the wedding...well, I shouldn't say anyone, as she invited my parents and his son. Her reasoning is we have a big family, yeah 10 other people is a lot.

She tells me that she will get remarried next year and have a celebration then and the whole thing. Right, how many people do that unless your a celebrity. And back to the 10 people versus his son what will change in a year are they expanding their family....

It isn't even the celebration thing...its being there for the service that is when she was married. I should be over this as she was married many years ago and eloped then and told us afterwards....but it would be nice to attend at least one wedding from one of my two sisters......

So congratulations even though I am ticked off that I wasn't invited...
