RECIPE TUESDAY

In honor of the fourth of July, here is a recipe from ww for American potato salad...yum so it well within the point system if you are following that program and a dip with crab meat can we say this is heaven so enjoy...





American Potato Salad Favorites

Summer’s not complete without this classic side dish. Ours has buttery Yukon Gold potatoes, hard-boiled eggs and a splash of vinegar for extra flavor.


Ingredients
2 pound Yukon Gold potato(es), peeled, cut into 1-inch chunks
2 large egg(s), hard-boiled
2 tsp apple cider vinegar
1/2 cup plain fat-free yogurt, Greek-style recommended
1/4 cup fat-free mayonnaise
3 Tbsp Vlasic Sweet Relish (No Sugar Added), or similar product
1 1/2 tsp McNeil Nutritionals SPLENDA No Calorie Sweetener
1/2 tsp table salt
1/2 tsp black pepper, freshly ground
1/2 cup celery, diced
1/3 cup red onion(s), chopped
Instructions
Put potatoes in a large saucepan and cover with 2 inches of water; bring to a boil. Reduce heat and simmer, uncovered, until potatoes are fork-tender, about 7 to 9 minutes; drain and cool slightly.


Meanwhile, in a large bowl, using a fork, mash yolk from 1 of the eggs with vinegar until smooth. Add yogurt, mayonnaise, relish, Splenda, salt and pepper; stir until blended.


Add potatoes, celery and onion; toss to mix and coat. Chop remaining egg white and egg; gently fold into potato salad. Cover and refrigerate until chilled. Yields about 3/4 cup per serving.

HOT CRAB MEAT DIP

1 can Alaskan crab (I use imitation crab and cut it up)
1 (8 oz.) pkg. cream cheese
1 cup of mayonnaise
Small amount of chopped onion
Grated Parmesan cheese

Combine crab, cheese, and mayonnaise. Mix. Add onion to taste. Put into shallow baking dish, top with Parmesan cheese. Bake at 400 degrees for 30 minutes. Serve with Triscuits.

Can't wait to make it on the fourth!!!!
Love those Yukon Gold potatoes also, so I can use that recipe for one of my higher calorie cook-outs in the future.
